Fonio with tomato-peanut sauce

Today we were inspired by African cuisine and cooked a peanut sauce with beans to go with our fonio.

Ingredients: (2 people)
100g Fonio
2 tbsp sunflower oil
1 tbsp tomato paste
300 ml vegetable broth
One onion
3 tbsp peanut butter
Half a glass of kidney beans
Salt
2 tsp ginger powder
2 tsp chili powder

Preparation:
First, the fonio is prepared in hot water according to the instructions and set aside. The sunflower oil is heated in a pot and the tomato paste is added.
The tomato paste is briefly fried and then everything must be deglazed with the vegetable broth.
A chopped onion is now added to the broth and the whole thing is left to simmer for 5 minutes. Finally, the remaining ingredients are added. Stir well until the sauce becomes creamy and let it simmer for another 5 minutes. When seasoning, you can vary the spiciness according to your taste.
